i’m gonna come right out and say it – these pastries are fantastic. growing up, we went to riverside restaurant with my mom’s family. bohemian food. home-made. delicious. and c h e a p. chicken noodle soup with fresh rye bread, breaded pork tenderloin, dumplings, home-made gravy, saurkraut and apricot kolaches. almost none of us ever need a menu, it’s just whether people want red cabbage or applesauce instead of saurkraut, or the occasional fruit dumpling order. these are not as good as the riverside ones, but damn close. they’re pretty easy to make, too. so good. you can find the recipe at lottie + doof.
a sweet yeast dough to start.
split into 16 rolls, cover with plastic wrap for the second rise.
indent with the back of a spoon, add a heaping tablespoon of filling to each.
sprinkle with a crumb topping.
apricot pastry filling. yes from a can. don’t judge.
once baked, they pull right apart.
